Instructions
- Gather 3 mixing bowls:
- Bowl 1: flour
- Bowl 2: Beaten egg
- Bowl 3: Mix bread crumbs and parmesan
- Slice zucchini into 1/2 inch thick rounds
- Preheat olive oil in a skillet on medium/high heat.
- Dip zucchini on both sides in bowls 1, 2, and 3, respectively, and place apart on a cutting board or plate.
- Fry breaded slices for about 1 minute on each side.
- Place fried slices on a paper towel to dry.
