Zucchini Parmesan Crisps

Ingredients

1/2 cup Canola oil  
1/2 cup Bread crumbs  
1/4 cup Parmesan cheese  
1-2 whole Zucchini  
1/4 cup Flour  
1 whole Egg  

Instructions

  1. Gather 3 mixing bowls:
  2. Slice zucchini into 1/2 inch thick rounds
  3. Preheat olive oil in a skillet on medium/high heat.
  4. Dip zucchini on both sides in bowls 1, 2, and 3, respectively, and place apart on a cutting board or plate.
  5. Fry breaded slices for about 1 minute on each side.
  6. Place fried slices on a paper towel to dry.
