Ingredients

Serving Ingredient Notes
8 tbsp Unsalted butter  
3/4 cup Onion Diced
3 cloves Garlic Minced
1 cup Baby bella mushrooms Sliced
3 tsp Tamari  
3 cups Vegetable broth  
1/3 cup Flour All purpose
1/4 tsp Sage Ground
1/2 tsp Salt  
1/4 tsp Pepper  

Instructions

  1. In a sauce pan, melt 2 tablespoons of butter.
  2. Add the onion, garlic, and mushrooms and sautee for 8-10 minutes, or until it cooks down and the mushrooms release their liquid.
  3. Remove the mushroom mixture from the pan and place it into a blender or food processor.
  4. Blend the mushroom mixture with 1 cup of the vegetable broth until smooth, then set aside.
  5. Melt the remaining 6 tablespoons of butter in the sauce pan.
  6. Add the flour and whisk constantly for 1 minute.
  7. Add 2 cups of the vegetable broth and the tamari, and continue stirring.
  8. Add the blended mushroom mixture and continue to stir as it thickens.
  9. Continue whisking the vegetarian gravy for 5-10 minutes, or until the mixture thickens and coats the back of a spoon.
  10. Add the sage, then salt and pepper to taste before serving.
