Veggie Quesadillas

Ingredients

Serving Ingredient Notes
1 Pack of 10-12 inch tortillas  
2 cups Frozen bell peppers  
1 can Black beans  
1 can Corn  
1/4 cup Taco seasoning  
2 tbsp Olive oil  
2 cups Shredded cheese  
1 tbsp Hot sauce Optional
1 cup Guacamole  

Instructions

  1. Heat pan or skillet over low/medium heat with olive oil
  2. Cook frozen veggies until soft
  3. Add beans, corn, and taco seasoning
  4. Heat another pan over low/medium heat
  5. Add tortilla, sprinkle one side with cheese
  6. Add filling over the cheese; sprinkle another layer of cheese; add hot sauce if using
  7. Fold other side of tortilla over filling
  8. Cook until cheese is melting and tortilla is golden/brown; flip; repeat.
  9. Serve with guacamole and chips
