Instructions
- Place the drained and rinsed chickpeas, soy sauce, oil, garlic powder, onion powder, chili powder, scallions, and cheddar (if using) in a food processor. Pulse until combined. Alternatively, use a fork or potato masher to combine.
- Taste and adjust seasoning if needed, then roll into about 8 balls (roughly 2 ounces each) and place in the fridge while you prepare the toppings.
- Prepare toppings for the tacos.
- Heat a large griddle or skillet over medium-high heat. Lightly grease the skillet with a little oil and add a chickpea ball.
- Top with a tortilla and press down until flattened. A burger press, wide spatula, or baking sheet will also work.
- Cook for 2-3 minutes, then flip and cook another 1-2 minutes.
- Add toppings and serve.
