Peanut Lo Mein

2-4 servings if not bundled in packaging |
Instructions
- Make peanut sauce
- Cook tofu:
- Drain and press tofu to remove excess water.
- Tear tofu into small chunks.
- Heat oil in a large skillet and add tofu.
- Break up tofu with a spatula as it cooks, until it resembles ground meat.
- Cook until dry and lightly browned.
- Cook vegetables:
- Chop broccoli and bell pepper into roughly half-inch squares.
- Steam veggies in a large, covered pan with olive oil until tender.
- Cook noodles:
- Bring a medium pot of water to boil.
- Cook noodles for 4-6 minutes, or as directed (al dente preferred as they will continue to cook later on).
- Mix ingredients:
- Mix peanut sauce into pan with vegetables.
- Remove pan from heat and fold noodles into mixture.
- Cool and serve.
