Pasta e Fagioli Soup

Ingredients

1 tbsp Olive oil  
1 cup Water  
1 cup Mirepoix mix Frozen section
2 cups Vegetable stock  
1/2 cup Ditalini pasta  
1 can Cannelini beans 15 oz
1 can Tomato sauce 7.5 oz
2 cloves Garlic Minced
1 leaf Bay leaf  
1 tsp Italian seasoning  
Pinch Salt  
Pinch Pepper  
Dash Red pepper flakes  

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Saute garlic and mirepoix mix for about 5 minutes, or until veggies are tender.
  3. Add tomato sauce, spices, stock, and water, and bring to a boil.
  4. Simmer for 15 minutes.
  5. Drain and rinse beans.
  6. Add beans and pasta, stir, and bring to a boil.
  7. Simmer for 5 minutes, or until pasta is al dente.
  8. Let cool, remove bay leaf, and serve with bread and butter.
