Minestrone Soup

Ingredients

This slow-cooker meal is prepared in two phases.

Phase 1

Serving Ingredient Notes
1/2 bag Mirepoix mix Frozen is easiest
14 oz can Diced tomatoes Don’t drain
1 tbsp Tomato paste  
1 tbsp Garlic Minced
1 whole Bay leaf  
1 tbsp Italian seasoning  
Pinch Red pepper flakes  
3 cups Vegetable broth  
1 can Mixed beans May substitute tri-color beans

Phase 2

Serving Ingredient Notes
1 whole Zucchini  
3/4 cup Ditalini pasta  
1/2 cup Green beans Fresh or frozen
1/2 cup Spinach Chopped; fresh or frozen

Instructions

Phase 1

  1. Add ingredients to slow cooker, stir, and cover
  2. Cook on low for 6-8 hours or high for 3-4 hours

Phase 2

  1. 30 minutes before end of cook time, add remaining ingredients and cook on high
  2. Serve with parmesan and bread
