Mediterranean Chickpea Salad

Instructions
- In a medium pot, combine water and quinoa. Bring to a simmer and cook until all water is absorbed, about 15-20 minutes
- While quinoa cooks, prep veggies
- Mix olive oil, lemon juice, feta, salt and pepper to make the dressing
- When quinoa is cooked, combine with veggies and dressing
- Serve as-is or cold from the fridge
