Mediterranean Chickpea Salad

Ingredients

1 can Chickpeas Drained and rinsed
2/3 cup Uncooked quinoa  
1 1/3 cup Water  
1 cup Cucumber Diced
1 cup Tomato Rome or cheery; Diced
1 can Sliced black olives Small can, if available
1/4 cup Feta cheese  
1/4 cup Olive oil  
2 tbsp Lemon juice  
Pinch Salt To taste
Dash Pepper To taste

Instructions

  1. In a medium pot, combine water and quinoa. Bring to a simmer and cook until all water is absorbed, about 15-20 minutes
  2. While quinoa cooks, prep veggies
  3. Mix olive oil, lemon juice, feta, salt and pepper to make the dressing
  4. When quinoa is cooked, combine with veggies and dressing
  5. Serve as-is or cold from the fridge
