Lentil Taco Salad

2 tbsp Olive oil  
1 can Lentils Drained and rinsed
1/2 can Black beans Drained and rinsed
1/2 can Sweet corn  
1bsp Taco seasoning  

Toppings

1 cup Shredded lettuce  
1 cup Fritos  
1 tsbp Sour cream  
1 tbsp Salsa  
1/2 cup Shredded cheese Mexican mix, if available
1/2 cup Black olives Sliced

Instructions

  1. In a medium pan, heat olive oil over low/medium heat
  2. Cook beans and corn for about 5 minutes
  3. Add lentils and coat with taco seasoning
  4. Cook for another 5 minutes or until soft
  5. Add toppings
  6. Serve as taco filling or as a bowl
