Lentil Sloppy Joes

Ingredients

Serving Ingredient Notes
1 cup Dried lentils Green or brown
2 cups Vegetable broth  
1 can Tomato sauce 8 oz
1 can Tomato paste 6 oz
1 cup White onion Diced
1 cup Red bell pepper Diced
1/2 tbsp Soy sauce Can substitute coconut aminos
1 tbsp Garlic Minced
2 tbsp Maple syrup  
1 tbsp Red wine vinegar Can substitute rice vinegar
6-8 Harmburger buns  
1 tsp Salt  
1/2 tsp Pepper  

Instructions

  1. Stir all ingredients in a slow cooker.
  2. Set to cook on high for 4 hours (or on low for 8 hours).
  3. Stir and serve on buns (or as desired).
