4 links Plant-based sausage Careful with spices
1 can Red kidney beans 14 oz
1 can Crushed tomatoes 14 oz
3 whole Bell pepper Try to get green, red, and yellow
2 ribs Celery  
1/2 cup White onion  
1.5 cups Long-grain white rice Dry
4 cups Vegetable broth  
4 cloves Garlic Minced
2 tbsp Olive oil  
2 leaves Bay leaf  
1/2 tsp Cayenne pepper Can substitute red pepper flakes
2 tsp Paprika  
2 tsp Oregano  
1 tsp Thyme  
Pinch Salt  
Pinch Pepper  

Instructions

  1. Heat olive oil in a skillet over medium heat.
  2. Slice sausage into 1/2 inch sections.
  3. Drain and rinse beans, and pour them on a paper towel to dry.
  4. Dice onion, celery, and bell pepper (about 1/2 inch pieces).
  5. Cook sausage for 3-5 minutes on each side, and then move to a plate to cool.
  6. Saute garlic and veggies for about 5 minutes, until tender and translucent.
  7. Mix spices into veggie saute and cook for an additional 1 minute.
  8. In a large pot, add crushed tomatoes, rice, bay leaves, and broth.
  9. Transfer sauteed veggies to the pot.
  10. Bring pot to a boil and simmer for 20 minutes, mixing occasionally.
  11. Add sausage and beans to the pot and boil/simmer for an additional 5 minutes.
  12. Remove bay leaves, season with salt and pepper, and let cool before serving.
