Instructions
- Heat olive oil in a skillet over medium heat.
- Slice sausage into 1/2 inch sections.
- Drain and rinse beans, and pour them on a paper towel to dry.
- Dice onion, celery, and bell pepper (about 1/2 inch pieces).
- Cook sausage for 3-5 minutes on each side, and then move to a plate to cool.
- Saute garlic and veggies for about 5 minutes, until tender and translucent.
- Mix spices into veggie saute and cook for an additional 1 minute.
- In a large pot, add crushed tomatoes, rice, bay leaves, and broth.
- Transfer sauteed veggies to the pot.
- Bring pot to a boil and simmer for 20 minutes, mixing occasionally.
- Add sausage and beans to the pot and boil/simmer for an additional 5 minutes.
- Remove bay leaves, season with salt and pepper, and let cool before serving.
