Gnocchi & Veggies

Ingredients

Serving Ingredient Notes
1 lb Gnocchi  
2-3 crowns Broccoli  
2 whole Bell peppers  
1 whole Zucchini Can substitute squash and/or other veggies
1 pint Cherry tomatoes  
1 lb Sausage Can substitute plant-based sausage
2 tbsp Olive oil  
1 tsp Rosemary  
2 tsp Garlic Minced
To taste Salt and pepper  

Instructions

  1. Preheat oven to 450 degrees
  2. Chop veggies and sausage links into bite-sized squares/slices
  3. Commbine with olive oil and spices in a large bowl
  4. Spread on baking sheet (may need multiple)
  5. Bake for 20 minutes, rotating halfway through
  6. Serve with parmesan
