Black Bean Lentil Chili

Ingredients

Serving Ingredient Notes
1/2 whole Red bell pepper Diced
2.5 cups Vegetable broth Can substitute 1.75 cups water
3/4 cup Dry green lentils  
1 can Rotel tomatoes  
1 can Tomato sauce 8 oz
1 can Black beans Drained and rinsed
1 can Sweet corn Drained
2 tsp Garlic Minced
1/2 tbsp Chili powder  
1/2 tsp Cumin  
1/2 tsp Brown sugar  

Instructions

  1. Add all ingredients to slow cooker
  2. Stir, cover, and cook on low for 6 hours
  3. Serve with sour cream, cheese, and cornbread
