Black Bean Burgers

Ingredients

Serving Ingredient Notes
1 can Black beans  
1 tbsp Olive oil  
1/2 bag Frozen mixed peppers Can also chop up fresh peppers and white onion
1.5 cloves Garlic Minced
1/2 tbsp Soy sauce Can substitute Coconut Aminos
2 tbsp Applesauce Can substitute 1 egg
1 tbsp Barbecue sauce  
1/4 cup Mozzarella cheese  
1/4 cup Bread crumbs  
1/2 tsp Chili powder  
3/4 tsp Cumin  
1/4 tsp Garlic powder  
1/8 tsp Paprika  
Pinch Salt  
Pinch Pepper  

Instructions

  1. Preheat oven to 325 degrees.
  2. Heat olive oil in a pan over medium heat.
  3. Drain and rinse black beans and place on a cookie sheet (recommend greasing or lining sheet).
  4. Bake black beans for 15 minutes.
  5. Saute peppers and garlic until onions are soft and translucent (6-8 minutes).
  6. Move black beans and sauteed veggies away from heat to cool.
  7. In blender or food processor, place remaining ingredients.
  8. Once cooled, add veggies and 3/4 of black beans to blender (leaving 1/4 of black beans on sheet for later).
  9. Blend mixture well, stopping occasionally to mix ingredients by hand, as needed.
  10. Remove blender cup/bowl from base and use as mixing bowl to fold in remaining black beans for texture.
  11. Preheat oven to 375 degrees.
  12. Scoop 1/3 cup of mixture out and place on cookie sheet (recommend greasing or lining sheet).
  13. Repeat with remainder of mixture, keeping scoops 2-3 inches apart.
  14. Gently form scoops into patty shape.
  15. Bake patties for 15 minutes on one side and then flip and cook for another 10 minutes (25 minutes total).
