Instructions
- Preheat oven to 325 degrees.
- Heat olive oil in a pan over medium heat.
- Drain and rinse black beans and place on a cookie sheet (recommend greasing or lining sheet).
- Bake black beans for 15 minutes.
- Saute peppers and garlic until onions are soft and translucent (6-8 minutes).
- Move black beans and sauteed veggies away from heat to cool.
- In blender or food processor, place remaining ingredients.
- Once cooled, add veggies and 3/4 of black beans to blender (leaving 1/4 of black beans on sheet for later).
- Blend mixture well, stopping occasionally to mix ingredients by hand, as needed.
- Remove blender cup/bowl from base and use as mixing bowl to fold in remaining black beans for texture.
- Preheat oven to 375 degrees.
- Scoop 1/3 cup of mixture out and place on cookie sheet (recommend greasing or lining sheet).
- Repeat with remainder of mixture, keeping scoops 2-3 inches apart.
- Gently form scoops into patty shape.
- Bake patties for 15 minutes on one side and then flip and cook for another 10 minutes (25 minutes total).
- Can be grilled on greased aluminum foil, as well.
