Banana Oat Pancakes

Ingredients

Serving Ingredient Notes
2 whole Bananas Very ripe/soft
1 cup Pancake mix Can substitute 1 cup flour + 1 tbsp baking powder
1/2 cup Oats  
2 tbsp Chia seeds  
1/2 tsp Cinnamon  
1.5 cups Almond milk Add more, as needed
Various Chopped pecans Optional; add preferred amount

Instructions

  1. Mix all ingredients together.
  2. Use potato smasher or mixer to break up bananas and mix ingredients.
  3. Heat skillet over low/medium heat.
  4. Scoop 1/2 cup (smaller or larger depending on size preference) of mix onto skillet.
  5. Wait until surface begins to bubble and then flip.
  6. When both sides are lightly browned, and the cake is cooked through the middle, set on a rack or plate to cool.
  7. Serve with butter and syrup.
